Cheese Omelet
1 oz/30g finely grated low fat cheddar cheese 1 teaspoon vegetable/sunflower oil 1 egg Teaspoon of milk Pinch of salt and a small shake of black pepper to taste
Beat the eggs, milk salt and pepper together. Add the grated cheese to the mixture. Heat the oil in a non- stick pan and pour in the egg mixture. Cook until the omelets is set and the bottom browned. Carefully fold in half.
Serve with a nice freshly made mixed lettuce salad.
Alternately add the cheese when the top of the omelets is set and the bottom is browned. Place the cheese on top and fold omelets in half.
